Zucchini Pizza

I'm not a huge Italian food eater but I LOVE these zucchini boats!


For those times that I'm craving pizza, these zucchini boat really do the trick! First, I slice my zucchini vertically (long ways), drizzle them with olive oil and season them with salt and pepper. With the oven on 350 I heat them for about 10 minutes, cooking them only slightly. Then I take the zucchini out of the oven, cover them with marinara sauce and any pizza topping you like. My favorite is Applegate pepperoni sprinkled with organic parmesan...YUM!! They are such a success that my hubby even eats them, and he don-lika-da-veggies!
