Paleo Pumpkin Crunch Granola

The number one reason I started Paleo was because of digestive issues. If you suffer from this ailment you know that nuts can often be a culprit. Well I LOVE nuts and hated the idea of not having them in my diet. I decided to do some research  and this is what I found.......

Question — Why is it important to soak nuts and seeds before eating them?
Answer — Nuts and seeds naturally contain enzyme inhibitors. And by soaking them, you not only release the toxic enzyme inhibitors, but also increase the life and vitality contained within them! The purpose of these enzyme inhibitors is to protect the nut and/or seed until it has what it needs for growing (ex. sunlight, water, soil, etc.). Since the soak water will contain the enzyme inhibitors, and is very acidic to the body, please be sure to rinse your nuts and seeds well after soaking.

Soaking the nuts make them much easy to digest. I know not everyone has a dehydrater but if you do I highly recommend soaking the nuts over night then drying the back out for any where from 12-24 hour.
The Pecans, sunflower seeds and pumpkin seeds have all been soaked and re dried. This is not a MUST but I will tell you that they texture and flavor is improved through the process

 

 Paleo Pumpkin Crunch Granola
2 cups chopped pecans
1 cup pumpkin seeds
1 cup sunflower seeds
1 cup combo of the following: hemp seeds, chi seeds and flax seeds or meal (not soaked)
3/4 cup pureed or canned pumpkin
1 TBS honey
1 TBS maple syrup
1 tsp vanilla
1 1/2 TBS pumpkin pie spice
1 TBS cinnamon
3 TBS water
1/2 cup pear or apple sauce
1/2 tsp salt
2 TBS chocolate chips (optional)
2 TBS cranberries (optional)

Put all nuts and seeds in a large bowl. Place all wet ingredients and spices in the blender and blend completely. Pour wet ingredients over nuts and seeds and coat completely. If you have a dehydrator, place  parchment paper on top of screen and dehydrate for 8-12 hours on 105 (keep it live) you may need to stir half way between. If you are using the oven, spread out on large cookie sheet with edges and bake on 300 for apx 30 min stirring half way through. Every one's oven is different so timing may vary.  Let cool on cookie sheet before stirring
Honestly this stuff is amazing. Use it to top your coconut Kefir or just EAT IT!
